Bake the apples whole in the oven at 180 degrees for 40-60 minutes, depending on their size. They should become very soft.
Rub the baked apples through a sieve to remove excess parts and obtain a puree.
Stir the rest of the ingredients, except the powdered sugar, into the warm puree and leave for 20 minutes for the yeast to disperse.
Bake the pancakes in a small amount of melted butter, first on one side until golden brown, then turning them over on the other. Serve warm or cold, sprinkled with powdered sugar.
